Kale - what exactly is it?
"Kale with Pinkel" or "Brown Kale with Pinkel" is considered the true national dish of Bremen. The green kale, which gets its distinctive flavor from exposure to frost, changes color when cooked, turning brown. The brown kale is served with Pinkel sausage, which consists of kidney fat, onions, oat groats, pieces of bacon, pepper, salt, and cloves, and is encased in a casing made from the rectum of a cow, the so-called "Pinkeldarm." Other side dishes include Kassler roast pork, striped bacon, and, of course, boiled and roasted potatoes.
The traditional start of the kale season is every year on Repentance and Prayer Day. We offer kale in our restaurant from January to mid-March.
